All beef dogs ONLY, pork dogs need not apply. I’m reasonably flexible on toppings - but I can’t stand yellow cheap mustard (French’s) and will only use Dijon. [Cheap yellow mustard belongs in the trash, along with the ketchup, although if the person eating it is under 10 then ketchup is okay, on the grounds that they don’t know any better.]
Toasted bun preferred. I like the dogs grilled - to boil a hot dog is a cardinal sin. (But might indicate the person is Irish, and doesn’t know from jack not to boil meat.)
Anyway, beef dog done with mustard, and onions (red or yellow, depending how strong my stomach is) and dill pickles. Sauerkraut is great, especially if browned. OR dog with mustard on bun, yellow onion, beanless chili (chili with beans is a cheat and beans are “filler”) with grated chess on top.

Have you ever had roast beef on a wick? The two things I miss about not living in Buffalo, Webers Horseradish Mustard and Anderson's Beef on Weck.

Ketchup, mustard and onions. Lots of onions. Blasphemy. There are hot dog stands in Chicago that would refuse to serve you.

Best hot dogs ever in the 60's & 70's...steamed in beer and topped with hot spicy mustard, onions and kraut...

Polish American Citizen’s Club, Danbury CT, in the 70’s - Monday Night Football, hot dogs with kapusta. Great Combo, especially with 30 cent Pabst ponies (7 oz.) ;)
