I’m in central TX and am wanting to try to grow some toy choi, and other asian cabbage type veggies for the fall/winter garden.

Does anyone have experience with growing them in TX?

Do you mean "bak choi"? Yes, they are a cool weather plant and should grow well. Make sure you have deep soil, or build a raised bed. Construct a cold frame that you can drape a plastic sheet over if we get a freeze warning. They should do well.
