The 6151 Inside out roll---the ne plus ultra
of sushi ($25 per roll---if you can find it:

Rectangle of rice, nori sheet, lardons of cream cheese down center,
line of julienned jalapeño; line of crumbled deep-fried crab cake,
blanched asparagus; roll-up; coat w/ masago (capelin roe--orange fish eggs).

PLATE Layer on dish sushi roll slices laid flat,
lobster tail cooked in sauce of chili paste, h/cream,
drizzle of caramelized eel sauce.

SERVE warm garnished w/ chp scallions, toasted sesame seeds.
