Wow, that sounds like a wonderful menu! I’d like the recipe for the marinated brussel sprouts. And how much tenderloin did you make for that many people?
well it was a buffet not a sit down meal, so with all of the other stuff, I wasn’t too concerned about everyone filling up on the tenderloin. it was 3.5 lbs. I basted it with a stick of unsalted butter melted and 3/4 of low sodium soy sauce, throughout, and had seasoned it with garlic powder and pepper. It was quite good. I added cremini mushrooms to the pan after the meat was done and resting, and had that as a garnish to the meat.
the brussel sprouts were marinated overnight in the Cindy’s Kitchen Barcelona vinaigrette dressing that I told you about, and I just added salt and garlic to a Ziploc bag of the sprouts and dressing.
So the sprouts were not cooked, just marinated? I’m thinking of doing a mushroom gravy with tenderloin for Christmas.
oh no, they were roasted not raw. but marinated overnight. the longer they marinate the better they taste.
When we went out for xshub’s bday dinner last week I ordered some brussel sprouts from a local place and immediately upon tasting them I said to xshub, these taste WAY too good for them to be ok for me to eat! I ate a very few of them bc I knew they had to be bad. and I talked to the diet nurse last Friday about them and she said OMG yes, they fry them in bacon grease!

I would’ve preferred more scrambling, less run up the middle failures. It was the same bad play they called, over and over.
That is a problem with the modern pass-happy NFL. There’s only one back and very few variations on options for run plays.
I know. I much prefer someone to move around and seize an opportunity, rather than watch pocket passers.
So you marinate then roast? - or roast then drizzle dressing over?
you do not marinate it, you pour the stuff over it, and then baste every 20 min or so. One suggestion that I followed, was to preheat the oven to 500 deg and cook it for a half hour at the high heat to make a nice crust, and then turn the oven off and leave it in another 60-90 min depending on how you like it done. This turned out a perfect medium rare.
