Here in NC, stuffing is in the turkey and dressing is baked in a casserole dish, so we have both and they’re not the same. Eastern NC oyster dressing is awesome if prepared correctly, not an easy thing to do.

My mother always stuffed the turkey and also baked dressing in a casserole dish because she always made a ton. I never liked the dressing as much as the stuffing, even though they were the same exact recipe.

I’d love to try oyster dressing, I don’t think I’ve ever had it.

Stuffing is the bread component baked inside the turkey. . . Northerners cook stuffing on the stovetop. Huh?
To: rdl6989
It’s easy to ruin, but wonderful at the hands of a cook who knows what she or he is doing.

Here in PA, it’s called “filling”.

Turkeys don't wear dresses.
Honestly Amelia, you're so silly.
To: Sybeck1
Neither. I can’t cook and my meal ticket is out of town.

Northerners cook stuffing on the stovetop, and southerners typically cook dressing in the oven. Not so. Stuffing/dressing should be cooked in the bird.

Using a dressing recipe for stuffing would be equally bad. The mistake is in using the same recipe for both. Stuffing remains moist, dressing gets crisp around the edges and on top. The ingredients and flavors that work for one won’t necessarily work for the other.

Guess I’ll make dressing. Somehow I don’t think stuffing will work well in the fryer. I might be a Yankee, but I spent a long time in Louisiana.
