Reminds me of midnight shift with the sheriffs department.Unlike suspects in the back of a police car, who might do all three of those things deliberately, my guess is the bear simply panicked when it realized it was trapped inside the car and just 'cut loose' in fear. The "spitting" was probably drool like you would sometimes see with large dogs.
