We are not giving up eating beef. We are changing some of our buying patterns which I happen to believe is a very smart thing to do for many reasons. Rather than buy meat, particularly hamburger, from multi-national conglomerates, we are buying it from local people who live and work in the community.

When I realized that hamburger sold in the large chains was produced in plants in huge bulk amounts, and often contaminated with ecoli to boot, I started buy meat at a small local store that cuts and grinds its own meat.

We rarely eat ground meat from any animal (although Mr. Lu does love his meatloaf), but I have a suggestion for you. If you eat a lot of ground meat, invest in either a stand mixer (Kitcheaid) with a grinder attachment or an old fashioned meat grinder. Buy the cuts you want from a reputable butcher and grind them yourself.
