I have lost 80lbs low carbing it since May!!!!
I eat a variety of veggies and some oatmeal and low fat meats mostly. I do like my pork steaks on the grill...had them late last night!!!
I feel sooo much better and the reflux is gone!!!
Was in at least 42" pants now 36"!!!!!!

LowCarb Grilled Eggplant with Roasted Garlic
- 8 small eggplants
- 1/2 lb goat cheese
- 2 teaspoons minced garlic (roast trimmed garlic in foil with a bit of olive oil in oven, at 350, for 45 mins)
- Olive oil
- Salt and pepper
- 6 shredded basil leaves
- 1 teaspoon red pepper flakes
1) Cut the eggplants in half and brush the cut edges with olive oil and salt and pepper.
2) Mix the cheese, garlic, red pepper, basil and blend well.
3) Place in the refrigerator to keep cool. Put the eggplants under a grill, flesh side down, and cook for 2 minutes.
Leave to cool slightly then spread the cheese mixture on the eggplants and serve.
