I've covered my house in pig's blood- I've also called the butcher and had several hundred pig's heads delivered.- ya just never know. Oh, & those 72 vergins? The maeanin got mixed up in multiple translations- the original was 72 girbils, not virgins.

As a retired sommelier I can recommend a few different wines in pork culinary food pairing using French wines when preparing offal. (Awful pun).
Soup: Pork consommé. Needs bubbly, let's go with Dom Rose, 1985 magnum.
Appetizer: Pork Mousse on baguette. Need something a little more hearty but still limp-wristed so let's go with an AOC Beaujolais - I like Fleurie for the delicateness, choose your grower and vintage, just make it recent.
Main Course: Pork tenderloin (the other white meat) Since it has a more delicate sauce we'll go with a wimpy Bordeaux, St. Emilion, producer and vintage your choice, don't spend more than $20.
Dessert: Since the bubbly course has already been used, we have to use late-harvest as a glaze. A botrytis affected late-harvest will pair nicely with the swine mousse fromage cheesecake.

You guys are silly. It's just a pig. Do you know how they used to kill pigs in the old days on the family farm? They hung them from their heels and stuck an ice pick in the carotid artery and let them bleed to death. This was believed to safeguard against contracting trichinosis. It was believed that trichinosis lived in the blood, so they reasoned that getting every last drop of blood out of the meat was the way to go. So, keep the pig alive as long as possible while the blood drains from the lowest point, the head. Then throw the head away.

Hi marmelukesabre-
I have no problem with a pig being butchered to feed people. I do have a problem with someone killing a pig because they happen to "need" a pig's head as the basis of their protest. I am not a vegetarian and eat a variety of meat products.

I don't know how it is in France, but in this country, if you need a pigs head, the only way to get one is to go out and kill it yourself. Hog slaughtering plants don't throw heads out in a dumpster and you can't go grab one if you need one. They get ground up into "paunch". and sent to rendering plants where they become dog food and cosmetics.
