Pepitos are the green kernel. "Pumpkin seeds" are the white seeds that lots of people eat, which contain the outer shell.

Guess you can tell, I've never made pepitos from scratch. I probably would have been extremely disappointed since I wouldn't have known the pumpkin seeds have to be shelled.

Oh, no! I was grown and in my 40s before I found out that most people eat the white seeds.

We had always gotten the green pepitos from Mexico here, all fried and salty. I was really disappointed the first time I did home-baked pumpkin seeds, until I split one open and found the little pepitos inside.

But it takes FOREVER to shell them.
