Cajun head cheese isn't cheese. Quite tasty, actually.
Anything goes well with Tabasco Sauce.

Anyway, this stuff would even make Rosie O'Donnel lose weight.....
We got some this summer, as an alternative to cooking meat during the hotter months..
Moms, in her 80's, and raised on a farm, was thrilled, and relished it..
I knew what it was but had never eaten it before..
I managed to eat it as my philosophy is "waste not, want not".. And it's actually not that bad, once you get used to it..
But it will never be high on my favorite foods list.
I can't complain too much..
No one will eat my beans.. ( Made from scratch, and will keep in the fridge for a month! )
