"Vital Wheat Gluten

Brief Introdction:

wheat gluten meal is also named vital wheat gluten. The flour is used as its raw material, and from which extracts a light brown natural grain powder through intensively processing. Protein≥75%
Moisture≤8%
Ash (lime)≤1%

Taste, smell: normal, with grain delicious

Note that it looks like this is also used as a human food additive/supplement.

You can just noticed a previously unobserved elephant in the living room.

God knows what else this stuff is in.

It's in the bread flour that I used to make a pizza crust with today. I mean, this really isn't news is it? I thought it was common knowledge that wheat gluten was a widely used ingredient. Is there a difference between wheat gluten and "vital" wheat gluten?

Anyway, nice to know that free trade is doing such a wonderful job diversifying our food supply, John Locke's invisible hand and all.

Sometimes it pays to be gluten sensitive. I avoid it like the plague. In this case, it IS the plague...even to people who aren't sensitive to gluten.
