There's something about this that doesn't quite make sense. Soy formula is not bad for a baby that small - many babies that can't tolerate lactose are put on soy formula and do just fine - in fact, they do better than they did on the cow's milk-based formula.
Though I question whether a 6-week old baby is ready for apple juice, they simply must not have been feeding the baby enough of anything.

Soy formula is has supplements which add vitamins. Its more calorie dense than soy milk, and (unlike juice), its not a freaking dieretic!

It said they were giving him soy milk, not soy formula.
I think a baby wouldn’t be able to properly digest soy milk, just like they can’t really digest cow’s milk.
This isn’t really a “vegan” thing. At 6 weeks the baby isn’t going to be eating any meat anyway — we didn’t feed our child any meat-like stuff for a year (we did breast-feed, and did the normal peas, rice, etc).
Apple juice is OK for babies, I wouldn’t at 6 weeks, but it’s no substitute for formula.
Their mistake seems to have been not using a baby formula. That’s not a “vegan” thing, that’s a leftie “evil formula company” thing in all likelyhood.

It wasn’t soy-based formula, it was simply “soy milk” that is sold in the dairy isle... definitely not intended for newborn babies!
