the irony is that the last part of tex-mex is now occupying north carolina as illegal immigrants. Mexicans don't know squat about barbecue, either -- the original barbecue was the barbacoa discovered being cooked by Carancahua (Karankawa) Indians in the Coastal Bend country of Texas by Cabeza de Vaca.
One of the Carancahuas' favorite barbecue dishes was people.
