Is it legal for the court to not allow a citizen to defend their own life with a firearm if they have been charged with murder while out on bail?

I think it is legal, though it's definitely not just. This innocent (and that's not just a technical quibble) man has been made virtually defenseless during this whole process, whether it lasts a few months or few years.

Where the heck in the Constitution does it imply the state can strip an innocent person of the constitutional right to defend himself by any legal means?

That a normal condition for the circumstances. There’s nothing to preclude him from having someone else come to his defense.
