It’s fermented tea and extremely low alcohol content. Full of good gut bacteria like kefir has. You just make it with tea and a SCOBY - kind of a pancake shaped growing culture. I gallon of green or other herbal tea, I cup sugar, add the pancake and let it ferment for a week. Started somewhere in China probably a thousand or so years ago.
