I have a friend who has decided that all the evils that befall her body are cause by.....gluten.
I just laugh and eat what I want.

avoiding carbs is a good thing for most people no matter in what form they come.

Definitely!
As for gluten, we ditched gluten as a family 2 years ago to see what would happen and several family members improved certain areas of their health dramatically. One example is that 2 weeks into it my son’s daily headaches just stopped.
There are many in-depth scientific studies done showing the adverse effect of gluten on the average Joe. So, not sure what this Bruce guy is talking about.

I watch people who think they are gluten free eating all sorts of gluten. Gluten is in damn near everything. Salad dressings, condiments, etc. It is very difficult to go truly gluten free.
I tried it some years ago, before it was trendy. I was down to about 25 foods I could eat. I think I lasted about 90 days. I don't remember if I felt better.

Here's what I think the problem is....over processed gluten sources. The gluten in 100% whole grain wheat or other grains is fine and it's healthy. The body digests it no problem. But with the processing that's done, some systems can't properly digest the glop that's passed off as food. Another problem is added "gluten" as an ingredient. It messes up the balance of the food. It's a cute trick the food manufacturers use to up the protein content which was destroyed in processing.
What I find hilarious is people who will insist on "gluten free" meals and then eat a donut as a snack.

It’s hard to go 100% carb free. Maybe 30-34 grams per day.
That’s all I’m counting. I lose weight and inches and it’s good for me to be low sugar.
Nor sure all the foods that have gluten, but haven’t had bread or dough for 3 weeks.

ignorant making that statement.
“To meet the body’s daily nutritional needs while minimizing risk for chronic disease, adults should get 45% to 65% of their calories from carbohydrates, 20% to 35% from fat, and 10% to 35% from protein.
There is only one way to get fiber — eat plant foods. Plants such as fruits and vegetables are quality carbohydrates that are loaded with fiber. Studies show an increased risk for heart disease with low-fiber diets. There is also some evidence to suggest that fiber in the diet may also help to prevent colon cancer and promote weight control.”

Then I found out that corn, rice, and potatoes have no gluten. Being the cynical person I am, it occurs to me who might be behind this entire fad. Certainly there is no science behind it, but there sure is plenty of push to avoid gluten. Could it be corn, rice, and potato growers have banded together to convince the American public to eat their product and avoid those other foods?BINGO

Yes, it is but that’s pretty low, which is good. I’m around 20 grams a meal.
If you’re interested, I recommend George Stella’s Complete Low-Carb cookbook. You can find it on Amazon. George Stella was a chef so his recipes are always delicious...and usually pretty easy. Now, they are all gluten-free as well.

Sounds like a cue for a gluten-free recipe (snix).
These are a good BBQ alternative for those who are gluten-free.
Brush cooked baked potatoes shells halved lngthwise with garlic butter. Crisp on grill 4-4-1/2 min per side. SPOON sliced grilled franks into potato shells; drizzle with BBQ sauce, and top with cheese. Grill/melt. Serve topped with sour cream and chives.
You can even fool yourself: leave grilled franks whole and slip into potato skins---like you would a bun---add fave toppings.

Several years ago, I read a glowing article about the agriculture department at a major east coast university earning money by planting several thousand acres of broccoli.
Several months later, I read a glowing article from the science department at that same east coast university extolling the health benefits of — guess what veggy.
