Why shouldn’t delegates be free to vote their conscience after the first ballot?

At some point, that has to happen or else the convention rules have to be changed to allow the nominee to win with a plurality in later rounds. Otherwise, there could be an immovable log jam.

Give the winner a cigar. The problem here is that some want the delegates for their favorite to be eternally bound while the delegates for other candidates to be free.

Which the Establishment would be delighted with. They have nothing to lose by making this a war of attrition once the Convention starts. Best to prevent it by working with the officer in the grass roots of the Party; Including Precinct Committee persons,Party officers elected at your County Convention up to County Chairman. These are the people who vote or appoint forward the delegates to the State Convention. These people then elect or appoint delegates to The National Convention at Cleveland.
