Obviously the notes were not added at the time since he was not a DA at the time. At the earliest they could only have been written after he became DA. More likely they were added around the time the gal hooked up with Gloria..

Allred told the press conference that her client had always meant to only include the signature and the Christmas greeting as being written by Moore, saying that she had the signature analyzed and it matched that of Moore.

So, why would he sign it as "Ray"?

Produce the offical analysis document, if you dare, Gloria. You know enough about evidence to know that 'saying' it does not make it true.
