Hear you. My oven, however, is an electric convection and I love how it cooks as does my wife. No hot/cold spots. Cooks dead evenly and very quickly. The stove’s a DeLonghi semi-commercial job. Simple, no electronics, barebones five burner, big oven and cooks great.
Yes a dual fuel is the ticket - gas cooktop and electric convection. Yes that is pricey - $5k+ for the stove. But a middle tier home could budget that into construction.
All the higher tier homes I work on have seperate gas cooktop’s - usually Wolf and built-in electric double oven
or oven/microwave combo’s. Lot’s of drawer type microwaves which I like very much - easy to get hot pots out of without the possiblity of spilling hot stuff all over yourself.
