IMHO, Israel should have these objectives in their attack on Iran:

1. Kill enough civilians so that the Iran population learns that attacking Israel is unhealthy. They may quit their "Death to Israel" chants with their leaders and their children.
2. Damage the missile/rocket manufacturing fascilities in Iran.
3. Damage Iran's oil export ports. Iran has made a lot of money from them lately. And the price of oil is going up.
4. Damage Iran's ability to close off the Hormuz Strait that Iran uses to leverage against other Muslim nations that need it. (Iraq, Kuwait, Qatar, UAE, and to some extent Saudi Arabia) This would be a good way to strengthen the Abraham Accords.

I don't think that's a good idea.

Many Iranians hate the Mullahs and hate the fact that Iran is an Islamic republic. They like the Western ways.

I think Israel should strike the Mullahs directly and weaken their hold on the Iranian people.

Iran’s population has no say in what the Mad Mullahs and the IRGC decides to strike. The people are forced to chant by the mullahs or face severe punishment, imprisonment, or death. Any dead civilians or troops are considered martyrs to Islam - a good thing in the regime’s eyes. If fact, the more the better.
