120 psi and a very thin wall of rubber = flats. Yes, they could put thicker rubber on, but the weight would be excessive. I've asked quite a few cyclists about this, and apparently there are urethane-filled tires out there that are pucture proof. So why don't cyclists use them? The urethane-filled tires weigh slightly more, so racers can't use them. But for those millions of recreational cyclists out there on the trails who wouldn't notice few ounces of extra weight, this should be a godsend. So why don't THESE folk use the new tires? The answer I keep getting is that cyclists "won't try anything new". They will spend thousands on every latest quarkonium-unobtainium frame, but they won't invest a little in something that would save them a lot of aggravation.

Concealed carry is definitely the way to go. Travel in pairs and keep an eye out for each other.
The rules of the road are for everyone. I don't like to see either drivers or bikers being inconsiderate. We all have to get where we're going safely and on time.

I am not aware of any general regulation that says one must walk a bike thru a cross walk. In fact I do recall at a few intersections in my area there are signs posted that say "Cyclisits Dismount for Crossing." Kinda like "Right turn on red" unless posted otherwise.

Yes, it cuts through the wind. That's why you aren't a serious biker unless you shave your legs too. As leg hair can actually cause a drag against the wind and slow you down.And if you take hormones and grow breasts, it makes your chest more aerodynamic.

On those round-the-lake paths, 10mph is probably appropriate. In NoVa, we have an old railway converted to a multi-use path, as well as multi-use paths paralleling some of the major roads. They're wide, straight, and more suitable to high speeds.
