Marbled Almond Cake with Espresso Glaze
METHOD Cream 3/4 c sweet butter, ¼ c of 1 2/3 c sugar. Add 1/2 c almond paste bits, cream light/fluffy. Add 5 egg yolks singly, tsp vanilla. elec/mixer 12 egg whites, 1/2 tsp salt on high to soft peaks. Then rest sugar tb at a time, beating to stiff peaks. Stir ¼ of stiff whites into creamed almond paste. Pour mixture back over rest egg whites. Fold in, sprinkling w/ 2 1/2 c flour as you fold. Add 3 oz melted semi/choc. Marble roughly w/ rubber spatula. Pour in g/f 10" tube or 2-6" bundts. Bake golden 350 deg 75 min; shrinks at sides.
GLAZE When completely cool, sift 11/3 c conf into bowl. Whisk in 3 tb coffee or espresso. Drizzle on top, let run down sides; set an hour. SERVE

Perhaps when everyone is calm, happy and healthy again, someone can make Liz’s nice recipe!

Prayers for her rehabilitation and better health.
I had 5 stents installed last July; 3 in thru the groin area, and 2 in the l/r arm veins. She’ll be on Plavix for a year or so, to keep the stents from clotting. Get ready for lots of ECGs and CT-Scans. Daily walks are a good idea once she’s discharged.
