For many generations, the village of Abu Gosh has been a stopover for pilgrims on their way to Jerusalem, and it was at this site they paid a toll for their transit.
The Arab village was established in 1520, and is named after the Abu Gosh family that came from the mountains of the Caucasus. Most of the villagers are descendents of this family, which is well known for the friendly relations they have with the neighboring Jews.
For many, Abu Gosh is still a stopover on the highway to Jerusalem, but the "fee" nowadays goes to its many humous restaurants. The humous of Abu Gosh is famed for its quality all over the country, and Israelis flock here on Saturdays, leaving not a single empty seat in any of the eateries around.

It can spelled either 'humous' or 'hummus', but it's still a ground chick-pea sort of bean dip. It's okay, but you can a lot better food in Atlanta.:)
I thought that came in Potting Soil...oh, yeah that's HUMUS.
I love my hummus and pita and hummus and crackers and hummus and bagels. Ummmmmmmmmmmmmm... Such tasty treats.
But the darn store I go to did not have any stock of my tried and true Athenos brand hummus this week.
I do have a large tub of hummus by the Tribe of Two Sheiks that has sat in my fridge for more than a month now...but I don't want it because I don't trust it because it might not be as good as the Athenos brand!!! Although the Tribe of Two Sheiks brand seems to win many taste tests...
I also have the raw materials for some homemade hummus...but I don't want to make it because -- again -- it might not be as good as the Athenos brand!!!
I knew I should have refrained from clicking on this thread. I am now fully in an uncomfortable hummus withdrawal mode, if unintentionally, and I feel extremely deprived. I may compell myself to open that the Tribe of Two Sheiks hummus soon...
Forget those brands, and look for hummus called "Gosh" by Sabra (a/k/a Tzabar) foods, as well as all their other hummus flavors. They sell it at Publix and Kroger here.
