My fave parody of a soap was “Mary Hartman Mary Hartman” (particularly after I got to meet Louise Lasser at Starbucks). “Soap” was pretty funny, but not exactly a parody of real soaps as we know them.

SCTV had the soap, “The Days of the Week”, which was a funny spoof. The dramatic theme music for it alone is probably better than 90% of the real soaps.
