Each escort carries a whole bunch of missiles. Not much can get thru all the layered defenses. Most countries air forces would not even get close to even see the carrier.

They did. The helos are Navy and there is a flight of Hornets center position in front of the carrier. The Buff is accompanied by a flight of Eagles.

The short answer is because carriers sink destroyers when they run over them, so the safest place to be is astern of them. Smaller ships generally follow the 3-2-1 rule operating around carriers-no closer then 3000 yards ahead of a carrier, 2000 yards on the beam, 1000 yards astern. Especially during flight ops, when carriers are notorious for maneuvering to follow the wind and not signaling their movements to other ships.
This is a photo op formation though. Someone on a staff came up with it just to get some symmetry. It bears no resemblance to a real open ocean steaming formation.
