Michelle Obama’s Lunch Rules Limit Children To One Ketchup Packet

First Lady and school nutrition advocate Michelle Obama’s stringent lunch guidelines are limiting children to just one ketchup packet per meal.

A recent EagNews.com article profiled unhappy Idaho customers of the Obama administration’s revisions to the National School Lunch program, including a parent who called school lunches “not edible” and kids who have stopped eating lunch completely.

“Kids can’t take two ketchup packets [for burgers] because that would set them over on calories,” said a Burley, Idaho “district food-service secretary.”

You could try Crisco and a tablespoon of bacon fat & 1/2 tsp cinnamon for flavor. All well-chilled & mixed with ice water, of course. That will come out like the old style. Even better if you sub some of the Crisco with butter or lard.

Has this woman ever been in a High School cafeteria? They throw away 100’s of apples and veggies a day that they are forced to put on their plate to satisfy the powers that be. It really makes me mad that our taxpayer dollars are wasted to appease a first lady's pet project. Trust me I know, I just retired from teaching and I served cafeteria duty last year and was shocked at the waste.

Don't they want kids to have "vegetables"?

You want some really good potatoes and simple too try boiling cubed potatoes skin and all or nuke them in the microwave with just a little water for steam- then drain them. Smash them a bit and stir in lemon or lime juice, olive oil and oregano.

Divinity is a good way to use up egg whites and you can give the results as a gift.
Extra egg whites are also great pet food if you have birds, dogs or cats.

That sounds good, I will skip the microwave though; it’s on top of my fridge. I have been using more olive oil. Actually, I like boiled potatoes mushed with a fork with real butter, salt and pepper.

Since the issue here is calorie count, it would be interesting to get a calorie count for the private school meals and the public school meals.

OK, divinity. I can only make it when the humidity is low, haven't for years. At most I beat only 3 egg whites which makes it yummy soft. I finally have a nice candy thermometer.

The problem is my hands shake and arms are weak. You have to pour the syrup in a thin steady stream, stand mixer now will be a help so I can put two hands on the pot handle. I can only manage one small batch at a time. It has to be a heavy pan, mine don't always pour right either. If I could hold the hot syrup longer, I would gladly double it as divinity is one of my favorites.

My cat probably wouldn't eat them. No dogs. I feed the birds outside. You mean use it raw? Or cook it?

I can make meringe shells, too, but they don't keep very well and I like them crispy on the outside and soft and chewy on the inside. Pavlovas.

All this talk about food and I haven't had any dessert for days. So I rummaged around and found some vanilla instant pudding. I perk it up with butter rum extract and nutmeg on top. Luckily my milk hadn't gone sour; I'm losing a lot of milk lately. I use over a half gallon when I make rice pudding in a huge round glass casserole.

Thank you for the suggestions. I wish I had frozen the whites in ice trays but I used a cool whip container.

A good idea, at one time I thought of opening an apple pie shop. I am not exaggerating the waste is sad. If I multiplied the number of schools in the county where I taught, we could feed the poor in this county alone.

Why don’t these parents send their kids with lunches. This is really dumb. I seem to be able to help make the kids lunches every morning (with my wife who does most of it), but still.....

I spent six years as the head chef at my kids’ (Catholic) school, and that’s EXACTLY how I cooked.

If I wouldn’t serve it at my own table, I wouldn’t serve it to the kids. And yes, that meant getting there early to make homemade EVERYTHING — cookies, pizza dough, tomato sauce, soup, you name it. (Except chicken nuggets; the kindergarteners would have lynched me.)
