Actually, not only are there sales taxes on firearms and ammunition at the state and local levels, there are excise taxes on them at the federal level.

Excise Tax Rates are as follows: 10% of manufacturer's sales price on pistols and revolvers, 11% of manufacturer's sales price on long guns, and 11% of manufacturer's sales price on ammunition.
As an aside, gunsmiths and ammunition re-loaders may also be liable for excise taxes, depending on circumstances. Doing your own smithing for your own use, or re-loading for your own use, are not taxable.
