I’d bet that what the Feds pass off to inmates as being pork bacon, ham etc. has little resemblance to what you pick up at the store or butcher shop.
Back in my college days, my university cafeteria served up some really nasty bacon in the morning and runny powdered eggs. The cereal was named brand stuff though and the milk for it was quite good.

I love bacon but I have gotten to where I use it mainly for flavoring. I like well marbled rib eyes but they need just a little more flavor so I put just a couple of slices of backon in the pan and also half an onion sliced up. I also slice up the bacon a few times.
I then throw in some flavored potatoes such as hash browns or tater tots or just Ore Ida potato rings. Also just a bit of salt and A-1.
It is very good, probably not the best way to cook it but the best I can do.
If these government policy makers had their way, they would put our prisoners on bread and water. With this type of food torture of our nation’s prisoners, they will be so mentally screwed up when they get out, they will need to be institutionalized in mental hospitals. If Trump gets to be President, he will root out these sadistic government policy makers and all of the food police will be thrown into the ash can of history.
Inmates should have no say in what food they get.
If I was in charge, they would get raw, uncooked oatmeal, water, discarded animal by-products, and a vitamin pill, every meal of every day. Discarded produce from local stores would be offered, as available.
On top of this, the prisoners would have to work or pay for this food and all their care.
Ground rat would be better.
Frankly they should be eating Soylent Green in prison, not real food.
Actually, replacing the prisoners’s meat with soy products has the added benefit of dosing them with a lot of phytoestrogens.
After awhile, they may start taking up yoga instead of lifting weights!

I love bacon in my clam chowder. Without bacon, clam chowder is second-rate.
I love bacon wrapped around my cheese stuffed hot dogs in a bun fully loaded with chopped tomato, jalapeño pepper, chopped onions, KRAFT Real Mayo Mayonnaise, ketchup mustard and sour cream.
There is nothing better than a Hawaiian pizza with Canadian bacon.
I bet our nation’s prisoners never get the good eats above. They get prison slop and there are government policy makers who want to make the prison slop even sloppier.
Good isn’t it? That place is in my neck of the woods.
