I’m not into TexMex. I lived in NM from 1972-1986. NM & CO have the finest Mexican food in the world. Much better than Mexico.
Secret? Hatch Green Chili. (and Red Chili)

Almost never find that type in Texas restaurants, but my wife and cook it. hee hee hee (note, she is from NC, go figure)
NM Mex is different from TexMex we can agree, but better no agree. NMMex seems to have more Indian influence, good for an occasion, but not as a staple.
“Real” Mex in Mexico was never like TexMex or NMMex.
Happy you didn’t try to throw CalMex into this ‘good mex mix’.
