I understand why the Spanish did it, and I know the Aztecs were stone-age, cannibalistic, war-mongering slavers, but I still am curious about what they wrote about.

Then you will have to read some other book because this one was written by the Maya not the Aztecs.

You omitted their multiple really scary, bestial, revolting, but ornate "gods", otherwise, you pretty well nailed the highlights.
