I go to Tony Luke’s for roast pork with provolone and broccoli rabe. Their cheesesteaks are just ok to me.

I don't know! Sorry, all I ever got was a pizza steak with provolone. I was afraid to order anything else because I didn't want to not like it.

Here's their menu. It looks like the only cheese choices are Whiz, American, or Provolone.

You are welcome to ask for Swiss or Muenster, but you might find yourself being frog marched out the back door and kicked into the middle of 4th Street.

Go there on a Friday night and check out the enormous mound of rib eye that's cooking on the griddle. It looks like Mt. Hood in Oregon.

Brie? Brie goes with apples. Swiss is great with roast beef. Jack and cheddar for burgers. For a Philly cheesesteak, American, Provolone, or Whiz. Really, Whiz is gross in general but it goes great with a cheesesteak and fried onions, especially after hitting a few bars.

Maybe Brie wouldn’t work (Food and Wine says its one of the best with beef). But Cheddar or Jack - oh yeah. But there is another really good soft cheese that would almost certainly go well with this that I was thinking about but haven’t been able to recall the name.

I don’t know. It’s been about 40 years since I’ve been to the one in NJ.

Someone’s already yanked the video cited here, was it in Philly?

Well, they have a small mountain of steak in this Dalessandro's video, but it is a tasty mountain!

American Cheese is indeed real cheese, made by combining 2 different types of cheeses {e.g. cheddar and colby or cheddar and jack). American Cheese Food, on the other hand, has additional non-cheese ingredients.

I grew up eating cheesesteaks made with American or Provolone - Whiz wasn't used back then. The first time I ever saw Whiz on a steak was back in the 80s when we stopped at Pat's en route to a Phillies game. Never saw Whiz used outside of South Philly.

Wow, that’s a whole lotto steak!

I never went to Dalessandro’s. I did go to Geno’s, and Pat’s, each once. Geno’s was in Reading Terminal Market, and so was not hard to get to for me. Pat’s is in South Philadelphia, so I could only get there if someone else was driving (I didn’t have a car for quite a while).

I thought that Jim’s was superior, but that may have been because that’s where I got my very first Philly cheesesteak, in the company of a very good friend.

In all honesty though I didn’t like Pat’s nearly as much. It is (or was) a very different style. My recollection is that Geno’s was similar to Jim’s, and from the video it looks like Dalessandro’s is also similar to Jim’s.
