Every culture has their version of fermented foods at the beginning of refrigeration, it seems the art fermentation was forgotten, and when it was made may of the vital steps (principles) were skipped, why this is so important is that it restored to us is for the friendly flora in our gut to fend off many of the air born and other diseases lurking.
