Sure, you've heard of street slices and stuffed crust, but how about Sicilian or strips? Or St. Louis topped with Provel? And no, we're not referring to provolone! There are many styles of pizza to enjoy, but what makes each of these pizza types different from each other? Pizza is certainly a beloved food in America. According to a United States Department of Agriculture (USDA) report, about one in every eight Americans will eat a slice of pizza on any given day. So why not mix things up with pies inspired by styles across this great globe of ours? We...

Since we are already thinking about the delicious turkey stuffing that is a traditional part of Thanksgiving dinner. #NationalStuffingDay Some cooks choose to stuff the bird with crusts of bread, vegetables, herbs, and spices. Others prefer to prepare a similar dish alongside the turkey using the drippings to moisten the dish. Either way, each preparation is a personal preference or family tradition. The difference is the first is called a stuffing, but...

The Italian-American tradition is alive and well in many households, including Stanley Tucci’s.For people unaccustomed to it, the idea of lasagna at Thanksgiving might seem extreme. When the holiday table is already buckling under the weight of stuffing, mashed potatoes, sweet potato casserole, and a giant turkey, the choice to add a tray of bubbling, saucy lasagna may not seem obvious – but that’s what makes it so special. Growing up, Searching for Italy host and actor Stanley Tucci would go to his aunt’s house for Thanksgiving, which tended to kick off with a course of Italian wedding soup, with...
  • For the Best Stuffing, Dry Your Bread Instead of Staling It

    11/11/2022 11:30:00 AM PST · by mylife · 64 replies
Whether you call it stuffing or dressing, the broth-soaked bread dish is a Thanksgiving must-have. Though it’s not advisable to stuff the turkey with anything, it’s commonly agreed upon that “dressing” is always made with cornbread, and “stuffing” is usually made with a white bread of some kind—usually sandwich bread. But no matter what kind of bread you start with, it has to be ready to receive liquid, and that is accomplished by either drying or staling. A lot of recipes recommend you stale your bread rather than dry it, but I think fully-dried bread gives your stuffing a better...
  • Don’t Cook Your Turkey in a Roasting Pan I roast my birds on a wire rack set over a baking sheet, and the bird has never suffered.

    11/09/2022 11:42:39 AM PST · by mylife · 68 replies
After years of hosting, cooking, and writing about Thanksgiving dinner, I have a confession to make: I have never used a roasting pan to cook my turkey. I don’t even own a roasting pan big enough to cook a turkey, nor a roasting rack to set it on. I roast my birds on a wire rack set over a baking sheet, and the bird has never suffered. In fact, the bird is the better for it. Roasting pans are quite deep. When you set a turkey down inside one, the sides come up around the lower parts of the body,...

I think I’ve posted the Russ Parsons/Judy Bird dry brining technique for turkey every year since I found it. It makes the best turkey we’ve had, and is a lot easier than the wet brine. A recent change I’ve noticed is that they now advise that you can even begin this while your turkey is still frozen and thawing: https://food52.com/recipes/15069-russ-parsons-dry-brined-turkey-a-k-a-the-judy-bird************************************* My favorite recipe for cranberry sauce comes from Tasha Tudor. It’s very simple but makes quite a lot if there aren’t many in your crew who like it. I usually halve the recipe and do it in a smaller mold:...

I don’t often read food reviews, but when the article concerns one of your favorites, you just can’t resist, right? Well, as a Chicagoan, when I saw an internet article come up on my screen, by a newcomer to Chicago reviewing the best of Chicago’s Italian Beef sandwiches, I naturally had to click on it. I didn’t expect to find a political meaning in the piece – and frankly, I’m quite sure that the writer didn’t intend any political undertone either – but there it was, in the subtext, for anyone who knows Chicago. The Italian beef is a great...

  • Mediterranean diet may reduce chance of frailty, according to new study

    06/27/2022 8:06:40 PM PDT · by ConservativeMind · 12 replies
A new study published has found that consuming a Mediterranean-style diet may prevent frailty. Defined as a recognizable state of increased vulnerability resulting from a decline in function across multiple physiological systems, frailty affects 10–15% older adults, and leads to other health issues. Although benefits of a Mediterranean-style diet are well known, its role in the reduction of frailty in older Americans who do not normally consume such a diet was unclear. The study showed that consuming a Mediterranean-style diet may prevent the development of frailty with aging. The study included 2,384 non-frail adults with Mediterranean-style dietary pattern score and...

I don't ever laud a restaurant on this forum or the internet, but this time is an exception. I grew up in Thailand and this restaurant has awesome Thai food...REALLY good! It is in Del Valle just east of Austin and has very good food at a reasonable price...if you can get a seat. Can't tell you how I found about it because that is proprietary business information, but highly recommend. You need to meet "Tenet" when you go there. Very good place to eat.

When I really got “into” hot sauce I was in college. As students back then we would eat whatever was cheap and soaked it with whatever hot sauce we could find to make it taste good, and since then I have never stopped. Tabasco, Minnie's hot peri-peri sauce, and Nando's peri-peri sauce are always in my fridge. Despite its widespread use, many people may wonder how this spicy staple affects your health. Besides giving foods a spicy kick, hot sauce has a number of qualities – ranging from improving your mood, to help you lose weight, to long-term medical benefits.

  • Vintage Recipes That Will Make You Ask “What Were They Thinking

If you ever browsed an old cookbook, you probably have stumbled upon some sort of strange recipe that makes you go “What?”. These sorts of recipes usually try to combine completely incompatible ingredients and pass the whole thing off as being “savory” or “piquant” when in reality “absolutely disgusting” sounds more suiting. And we’re not talking about things like salt and caramel. We’re talking about bananas and mayo, or cheese and lime. Here’s a challenge for you: find a vintage cookbook in your grandparents’ home and try looking for the weirdest and most bizarre recipe you can think of. Now...

Those unassuming cans of beans are like Clark Kent hiding in your kitchen. Concealed within an unassuming aluminum (and hopefully BPA-free) lining lies one of nature's healthiest sources of protein. That's right, we're talking about high protein beans. No cholesterol, rich in fiber, immensely versatile, incredibly convenient, and very affordable, beans are an oft-overlooked source of protein. While they may not hold a candle to the amount of protein per gram of animal meat, cooked beans are still great sources of protein. A half-cup serving can deliver upwards of 10 grams of protein—but that's only if you choose the right...

Basque hotels are where the locals eat, and in the rural west the locals prefer meat, potatoes, beans and dozen old-fashioned, garlicky side dishes, not tapas. This is why the Basque places seem locked in the past, because the people who eat at them are conservative in every sense of the word, ranchers, farmers, miners and the people who make their living servicing those industries. The Basque sheepherders, despite the barrier of language and religion, fit right in to the culture of the West. After 1876, the Basque most likely to come to America were the losers of the Carlist...
  • Hot Dog Jambalaya is a carnival of Mardi Gras flavor

I’m a sucker for a vintage cookbook, and apparently so is Brian Theis, recipe developer, Instagram maven, and author of The Infinite Feast: How to Host the Ones You Love. This new cookbook has a spectacularly retro vibe, with midcentury-style illustrations and graphic design, and food photography that evokes the finest images in the Good Housekeeping oeuvre. The concept itself is rather retro, offering menus for fun, quasi-kitschy theme parties throughout the year. And, as you’d expect from a lifelong student of Creole food who calls New Orleans home, Theis’ recipes for a Mardi Gras jamboree are dynamite. Though Theis...
