How do I deal with my roommmates gf (who is a friggin Architect Major and thinks she knows everything in the friggin world. Including Economics which is my friggin major. Plus, I've sat at my fathers knee [who worked in wall street for 20+ years] and have been learning from him for my entire life. I'd venture to say that I know the basics of economics.) who says that inflation and taxes have nothing in common and that socialism is not such a bad thing?
To begin with, I am a 21 year old Econ major. I began by stating that Inflation is a hidden tax. For example, in 1960 $10,000 was a good living. The government would tax it at 10%, which left you with $9,000. $1,000 gone in taxes. Now $100,000 is a good living since our currency was taken off the gold/silver standard. The Government takes 10%, leaves you with $90,000. Essentially the same correct? Wrong. We have a Progressive tax system. $100,000 bumps you up a level and sticks you at 30%. $30,000 gone. Boom! More money for government and the average person does not even realize it.
My second point was that every country who has gone off the gold/silver/whatever standard for money has collapsed because of inflation. What makes her think our country will be any different? She went off saying that the government will never go away, that the USA will always be here and inflation doesn't matter because the dollar is used by everyone. I asked her "What about Rome? Zimbabwe? USSR? etc etc." She said "What about France? Sweden, where I want to live because it has the highest happiness level? etc etc".
How do I DEAL with this woman? She's always in my apartment due to her dating my roommate and drives my friggin crazy. I'm moving out in 6 months but I need to figure out some way to shut her the heck up before I destroy the friendship I have with my roommate by exploding on her.

Have her buy all your groceries and gas from now on.
She sounds like someone who doesn’t pay her own bills. You won’t win this argument until she starts doing so.

Well, start talking about voices telling you that her grammar is out of whack, and offer to print her up some “currency”....

She’s going to be an Architect. From what I can gather, considering NC State’s architecture school is in the Design school program, they are all pretty liberal. I doubt she will develop a brain anytime soon.

Have the genius fill your car for $2,29 a gallon (that is what I paid a year ago.)
how do I explain to her that Government is not the immortal being she thinks it is? How the USA could collapse by 2020 due to inflation and debt?
Tell her to look at the price of gold though she may not get the point,
Give here the money and ask her to bring you back a 1/2 gallon of Bryers ice cream or a lb. of vacuum packed coffee.
The 1/2 gallons are 1.75 quarts and the old coffee lbs are now 12 oz. Same price, What a deal!
Have her buy the groceries.
Then compare it to the cost a year or 2 ago...

Ask her to loan you $10,000 at 0% interest for a 10-year term.
She doesn’t think socialism is that bad?
Direct her to study Lenin and Stalin, and tell her the millions of Russians killed by their government would have disagreed that socialism isn’t that bad.
What you need to do is get a "basket of goods and services" considered necessary and track every item to discover the current price. You'll know if it's all going up, or all going down, more or less, kinda, that way.
That will even accomodate housing.
Many young people only buy food at fast food outlets and the highest cost item they have is gasoline. Their world is rocketing out of sight ~ that cannot reflect on the pain of manufacturers who have to sell perfectly good machines for less than the cost of building them.
As Sarah told Bristol, there are many fish in the sea ~ so go find one of 'em.
