Oh and you are so right, Moracle Whip is NOT mayo.

Now this is probably blasphemy from a Mississippian, but my favorite barbecue is the clear vinegary Carolina barbecue.

When I grew up in Jax the only bbq was Otis on Lynch at Gallatin rd

It was mostly chopped or chipped not pulled or brisket

All pork on a bun with slaw and vinegar style with thick sauce on the table

BBQ beans and tater salad etc

You went through a line like Jacks in Nashville

I like all bbq from Texas to KC to Memphis to Ga to Carolina

Good Carolina bbq is Woodlands in Blowing Rock...

I prefer pork ribs and pulled pork quartered slathered chicken or Texas lean brisket

Jamaican pork pit which is similar is excellent chicken but I’ve yet to find it mimicked here outisde MoBay or Portland JA

I like the Rendevous restaurant but it’s an acquired taste

Coopers in Llano Texas is pretty good for meats and sides but it’s pretty vinegar for Texas and has its detractors though most agree it’s a top five in Texas

Brazilians and Nicaraguans do beef open pit well but it’s not so much bbq but chimchurri sauce

Tandoori chicken and lamb rocks too

The world open air cooks meats.....yummy
