My employer had a sales office in Hong Kong. 15 or so years ago on my first visit there, the office group took me out to dim sum lunch. It was in a huge dining hall.

We sat around a large round table and the various lunch items were brought out in stages which we shared.

One of my local sales assistants told me, as it was my first visit to HK, I was the honored person at lunch. A steamed, pale as a ghost, chicken head (with neck) was brought out and served to me.

I was served many “unusual” foods in China but this one was perhaps the most unusual.
