I often heard that about Airbus aircrafts but how much is true about this? How can he say it is impossible to do it on an Airbus? I doubt that he ever flow one at Air Canada.

Frankly, I don't know if an A-330 can slideslip or not, but it is a pretty basic maneuver so I would think it is possible. Simply kick in left rudder and throw in right aileron. When performing a cross wind landing you have to kick in some rudder just before touchdown to line up with the runway, so a slideslip wouldn't be that different.
