This is a smart plan. But be sure to tip aggressively. No reason to rob the poorly paid help. The objective is to cause pain to the business.

Not so sure about that. A pissed off servive staff would be pretty persuasive to an owner.
I agree with this. I think I’d make the point that it is now impossible to feel safe in their place of business BECAUSE they are advertising the fact that no one can defend themselves or others against armed criminals. Criminals who now have signs advertising ... as you said ... target rich environments!
There is a far less gentle technique, that gets some of the most interesting reactions. Dribble a little red food coloring on the TP in the restroom. It doesn’t really create a mess, just costs them a TP roll that no one will use, but it will be highly disturbing to customers that see it, and who tell others about it.
Coffee shops and restaurants absolutely need very clean restrooms that their customers are pleased with using. Having a restroom that people avoid can be very damaging.
And, of course, there is that one hysteric who totally lose it, and their imagination runs wild, and pretty soon who knows how exaggerated their story becomes.
