I eat Kale. I buy a spinach/kale salad mix. I also buy dried flavored kale snacks.
Im not great at eating vegetables but love the different greens so try to eat them as often as I can. I had scrambled eggs with spinach/kale in them this morning.
My new veggie experiment uses a tall see through plastic container. Put Mediterranean style veggies. Chopped up only bite size. Such as, bell pepper, olives, zuccini, mini tomatoes, mini carrots, broccoli, califlower, onion etc.
Optional cheese like crumbly blue cheese.
Drench in olive oil and basalmic vinegar. That preserves it. It should last for days. Easy eating, munching.
