The author had a bad night at an upscale restaurant and wants revenge. This is nonsense. I know the industry, it is not what is portrayed here.
The author is Anthony Bourdain, and he worked in the industry as a chef for two decades before becoming a writer.

This is the 1999 essay by Anthony Bourdain that made him semi-famous.
It evidently was not very fulfilling as he just committed suicide.
