Congrats! I’ve been down that road. Topped out at a little over 300. I’m 6’5” so was able to carry it around not too badly. After two years of sanity I’m now 193 lbs and holding steady for 6 months thus far. It feels good... like it SHOULD feel!
As you point out, carb reduction is the key. I would add to that the increase of proteins, vitamins and minerals, as well as very regular walking and other exercises.
Using protein/nutrition shakes has been key for me. And getting used to the fact that hunger is not synonymous with pain. Hunger is simply another tool I have to remind me that I was on the path. Once I learned to like going to bed just a little bit hungry the rest was gravy... so to speak. :)

But don’t over-do the protein or you’ll get the big puffy dark bags on your lower eyelids!
