Agreed. Muenster would be nice too. Almost all the soft fresh cheeses. Think Buffalo Motz. A hard rind aged cheese... hell no. Same goes for a soft aged cheese. Would ruin the BLT because it clashes with the bacon. That said, classic BLT doesn’t need improvement if you have fresh from the garden tomatoes.
A cheese (Hard rind aged) and fresh summer tomato sandwich by itself is scrumptious too.

My wife probably could have been a chef if she hadn’t decided to be a great RN.
Recently, we had some of her younger relatives and their daughters visiting. They live in Africa and a lot of their favorite foods are not available.
Besides my great char coaling skills and my wife’s prepping skills re good salads and sides, they wanted BLT’s made with pepper bacon, with their favorite slice of cheese, with some fresh lettuce and local tomatoes. Also, they wanted a side of my grilled okra.
While they were ODing on the above. I made them Ice Cream floats with AW root beer and a good local ice cream for dessert. We got some tears of memories and delight on the above.
Zero leftovers and the plates didn’t have a crumb left on them.
