Butter spread on a rolled up warm flour tortilla was called a burro in San Antonio, TX.
A flat fried corn tortilla with taco fixin’s and refried beans is a chalupa. Too many times, people call chalupas tacos. A taco is a chalupa that is folded in half.
A quesadilla is a warmed flat flour tortilla with melted cheese. Just the cheese. Any attempt at toppings is easing into the chalupa range.
Chimichangas are fried burritos. Rolled and enclosed flour tortillas, of course. If they’re fried flour tortillas stuffed and rolled with opened ends, they’re flautas. A flauta with corn tortillas is a taquito.
Buneulas are fried flour tortillas sprinkled with cinnamon and sugar.
Sopapillas are similar to buneulas and use the same basic recipe - flour tortillas. A flour tortilla is dry fried in a skillet but for sopapillas, you drop the dough into hot oil which causes them to puff up. Top them with the same as buneulas or honey and butter.
BTW, much of today’s “Mexican” food was invented this side of the border.

Some greens and fish with a ginger-garlic sauce would probably be good.
One thing is that people are now calling anything wrapped up in a flat bread a "taco". And there are a lot of cultures that make flat bread and wrap stuff inside of them.

All I know is if you want an authentic Italian taco you never put pineapples in them.
MMMMmmmmmmm !!! Bean and Jalapeno Tamale, Beef and Bean also. Way back when there was a Little old Lady on the Northbound side of IH-37 that Sold them by the Dozen IIRC for $5 or $6. We would usually clean Her out of 6 or more Dozen.
As far as what goes in a Breakfast Taco anything you want. Me Bacon/Ham/Sausage (no chorizo for Me)/Cheese/Scrambled Eggs/Fried small cubed potatoes with Verde Sause wrapped in a freshly made flour Tortilla...

Carne Guisuda (basically shredded Beef Tips in Gravy/Verde Sause/Fresh F;our Tortilla.
Burritos, too. Egg, bacon or ham, cheese, a little chopped and sautéed onion, green Tabasco (or your choice of hot sauce or other condiment) makes a nice filling breakfast.
Must be free range tacos
