Oh, I wasn’t doing research to answer your question, just for my own edification prior to the question.
I find the ancient world fascinating.

Typically they were small, family owned , long established and the owners, staff and patrons were very well known to each with the clientele demanding and expecting only the freshest foods meticulously prepared and served. None of the Italian people I knew and do know would ever go to an "Italian'' restaurant that was in reality a chain establishment.
Although there is an O.G. down in the valley, we are lucky to have a plethora of real Italian restaurants in the county run by real Italians with authentic ridiculous accents. One of the better ones is run by an Albanian however. Go figure.

Correct. I dont like speaking in general terms, but it’s our mentality. I always go tp small Italian restos with less than 10 tables. :)
That’s also my experience.
Imho, in Italian cuisine, freshness and quality of the ingredients are paramount. That’s one of the reasons Italian food is so delicious :-)
One could liken it to Japanese cuisine in this regard, where the same applies with regard to the quality of the ingredients. Fresh, fresher, the freshest!!! ;-)
When I went back to the old country 3 years ago in Sicily, when you eat out, I always notice TONS of tomatoes being ushered in, even at the front.
Of course :-)
Especially in Sicily, you will find the most flavorful veggies and fruit you can imagine.
You have witnessed and tasted it yourself, of course :lol:
And if you have a sweet tooth: in Sicily it will be Paradise on earth for you. Never have I had sweets as succulent and delicious as there. Happy, happy memories...
Oops, now I have drooled on my keyboard (blush). But the food in Sicily really is of an unearthly goodness. In my life I’ve never been fatter than after my stay in Sicily.
And that’s not even figuring in the wine. M-m-m-m-m!
Factory food is factory food, home cooking is home cooking and never the twain shall meet.
Apparently no speech monitors were in house to tell them to use their words from their toolbox instead of advocating violence.
