VIDEO: Air Fried Parmesan PANKO Eggplant

If you don't like eggplant, I don't blame you. Cooked solo and it leaves something to be desired. However, if you try my air fried eggplant recipe you just might end up eating eggplant regularly like I do now. The big secret is Panko that imparts a fantastic crunchiness to the texture.

Oh, and soon I will be showing you an ingredient that will take these air fried eggplants to the next level. You can guess what that ingredient is in the comments below.

I'll be doing MORE videos in the future featuring Panko which to me is a big game changer for cooking. Oh, and see if you can guess the secret ingredient that I will be adding to this eggplant recipe.

Panko is nice but my a good air fryer is where it’s at. I LOVE my air fryer!

I had air fried flounder with italian style panko crumbs earlier this week. I just sprinkle them on top after the fish is in the air fryer. Don’t even worry about coating the other side.

You’re doing it backwards. In my opinion.

Put the cheese directly on the chicken, eggplant or whatever, then the sauce. Prevents loosing the crispness that makes the dish.

The parmesan cheese was added to the Panko and breadcrumbs mixture that was applied DIRECTLY on the eggplant. During the air frying the parmesan cheese melts into the eggplant. The mozzarella cheese was placed on top to fuse in the tomato sauce at the end of the entire process.

Clarification. The salt is strictly for brining purposes to draw out the moisture inside the eggplant slices. After an hour or so of brining that salt, along with the moisture, is rubbed off with paper towels so it is not really salted eggplant.

Good guess but the ingredient I am thinking of is something that should be soooo obvious that you will smack yourself for not thinking of it when I do the big reveal.

YUM. I still think Rao’s arrabiatta (sp) sauce is good, even though I know the brand was sold. Just a spoonful on a slice, with parm and red and black pepper...nice hunk of good bread.
