Alexandder Siddig. He played Kalid Sheik Mohammed in "The Hamburg Cell", and Saladin's second in command in "Kingdom of Heaven". He was great on DS 9.

In ST: Deep Space Nine, there was a character named Dr. Julian Bashir. The actual actor is Sudanese/Pakistani who lived in England.
The character's ethinicity is never quite spelled out, although it was clear that he was Middle Eastern. Of course the name Julian is not one that Muslims would take.

The good Doctor Bashir was intended to fill racial slot of Arab/Muslim. He did it well.
