Bleach (Chlorine) and stainless steel don’t play very well, over time. Iodine is a bit messy. but takes a lot less to use (1/2-capful), and a lot less time.
Bottles: Jet bottle-rinser and hot water after drinking the beer; air dry in a recycled dishwater upper rack. Store in a beer crate until time to refill. Cold water & bleach to sanitize (as long as overnight), hot water Jet rinse and air dry while siphoning beer into the priming bucket.
Smaller equipment: Hot water wash/rinse and scrub with sponge (only! - for plastic items) if needed. Air dry. Sanitize when needed.
What is your opinion about a T configuration such that all of the wire is at the top T bars (like clothes line) rather than three wires 18 inches apart on top of each other like you suggested? If my sun is high in the sky and all three rows are above then equal sun. But if I have wires on top of each other than top row lots of sun, middle row less sun, and bottom row even less sun. Your thoughts?
I’m not too concerned about cold weather. NC is pretty moderate in winter.
I use Star-san, because I have it.
That said, I’m a biomed in a dialysis clinic. We make RO water for the dialysate and it is tested monthly for bacteria. I disinfect the system monthly. Too much info, I know.
Bottom line, 1:100 bleach, then rinse the hell out it, will sanitize very well.

I use Star San as well. I’ve brewed with it for many years and never had an infection. Also works great in a spray bottle so I limit the amount I use.
I use PBW (powdered brewery wash) for cleaning beer stone and assorted gunk from equipment. Works great for CIP (clean-in-place).
Agree with avoiding bleach. Bleach can damage stainless steel equipment and has the potential for adding off flavors to the beer.
I would encourage any brewer (as space and budget allow) to make the move to kegs. Bottling is time consuming and a PITA. If want to take beer to a party or ballgame I just dispense into a growler.
I have a small chest freezer and a Ranco controller. Want to make a lager in the middle of summer? The temp controller works great!
