The Army hospital at which I work has a yearly African American heritage observance. The menu in the cafeteria on that day? Fried chicken, BBQ ribs, corn bread, collards, black-eyed peas.
I used to work at a vocational-technical school in Oklahoma City that had a culinary program at one campus. The program director was a black woman with a history in restaurant management who would lead the students in devising the Black History menu every February. If you wanted to eat there that day, you had to get in a reservation for one of three different seatings they would do. It wasn't "black" food, it was just good country food like you listed plus sweet potato pie. You could order a take-home pie if you got lucky enough to be drawn.
