Weekly Cooking (and related issues) Thread

When we came home tonight, my husband smelled cooking coming from a neighbor’s place, and said it reminded him of a childhood favorite, Tuna Noodle Casserole. He hasn’t made it in a long time, but grew up on a recipe that used the typical canned-soup approach.

On the food network site, Pioneer Woman Ree Drummond has a from-scratch recipe that looks a lot better:

Another recipe from prepared items that we used to make was Corned Beef Hash, using canned corn beef and mashed potatoes. But if you are having corned beef for St. Patrick’s day, here’s a more interesting recipe for your leftovers, from the Happy Money Saver site:

Speaking of old school favorites, any one remember “porcupine balls”? Ground beef mixed with rice, formed into meatballs and slow simmered in marinara sauce. I haven’t made it in many years, but it is in the crock pot now.....smells good.

It sounds good; but does it turn out in the crock pot as well as on the stove?

I haven’t had much success with crock pots - or as Miss M. calls them ‘deflavorizers’.

Works for me, just on low temp for a few hours. I brown them in the oven first.....adds flavor and color.

You’ve got to be kidding me!!! I haven’t made tuna casserole in forever. Husband HATES IT. Its rainy & quite cold here so after school I picked up what I needed. Going to put it together soon.

Tuna casserole...... Swoon!

I love tuna noodle casserole. But, my wife started giving her cats canned tuna (people food) and now attributes the smell of tuna as cat food. I no longer get TNC or tuna melt sammiches. I only get tuna these days when the golf course has tuna sammiches on the menu. I think that I’ll spring for some albacore tuna and make my own TNC while she is at work.

I go old school cheap on tuna casserole.

I replace the normal noddles with macaroni and cheese, rather than cream of mushroom soup I use a jar of alfredo sauce. Add some frozen peas and some mushrooms and there ya go.

We like a good tuna casserole every now and then. Ours is pretty calorie hefty. We like to layer muenster and Monterey jack cheese in the middle and the top and when it’s 20 minutes away from being done we top with a container of fried onions. Some frozen peas inside too and we use good albacore tuna.

That sounds excellent! I’m going to suggest that my husband do some ‘jazzing-up’ when he makes this again - especially the adding-cheese part.

Meatloaf, the old fashioned kind with oatmeal and tomato juice in it and a toping of ketchup, brown sugar, and Coleman’s dry mustard. Several it with mashed potatoes and English peas, just like Grandma.

We also like toad in the hole, bangers and mash, Guinness beef stew, and shepherd’s or cottage pie.

We had a cat years ago who was crazy about shrimp. I don’t think I’d ever equate that with ‘cat food’ ;-)

We can’t get our current cats to eat ANY people food. They want to see what we’re eating, and claw a bit of food from the plate; but all they do is play with it.

(My grandmother always cooked the gizzards from a Christmas/Thanksgiving turkey for her cat; he was crazy about that, to the point of trying to get up on the stove while it was cooking. The cats we have now have no interest.)
